I will be sharing food recipes I come across to keep them collected and easier to test out at a point. All types. Will rate when I've tried them.  If you have tried some or similar recipes, feel free to rate the dish.

Red lentil Stew with Vegetables 
2 portions.

Ingredients:
1 onion, chopped
1-2 clove(s) of garlic, nicely chopped
2ss oil
2 carrots, diced
1 paprika, chopped
1-2 branches of celery, chopped

2dl red lentils
5dl water
1 vegetable bouillon
2ts tomato puree or ketchup
1 small spoon of freshly grated ginger (can be skipped)
a dash of chili powder
1\2 small spoon of garam masala spice

Preparation \ instructions:
1. Wash, rinse and chop the vegetables. Wash the beans.
2. Add the oil to a pan. saute onion and garlic.
3. Add all the vegetables and lentils. Let it cook for 1 minute.
4. Add the water and spices.
5. Let it cook for about 20 minutes.*

* You can change the lentils for any other type of lentils or beans. Check the package for cooking time.

Homemade Ceasar Salad
2 portions.

Ingredients

2 slices of (dried or dry) bread, diced 
1 ts oil
1 clove of garlic, pressed
1-2 salad leaves (romano or Chinese cabbage), shredded
1\2 head of issalat, shredded
1 ts parmesan 

add meat or bean\lentils etc. to it at wish.


Dressing
1 ts mayo
1\2 ss white wine vinegar
1\2 clove of garlic, pressed
1 ts sourcream 
1 ts water
a dash of pepper

Preparation \ Instructions:
1. Prepare all ingredients, but don't mix in the salad before you're going to serve it.
2. Make the croutons out of the bread and oil in a pan
3.  Let the croutons cooldown and squees garlic on them.
4. Make the dressing. 
5. Mix everything together.


* if you have some old bread that hasn't gone bad or that you won't eat, air dry it and make croutons out of it so it doesn't go to waste. add some oil and spices and put it in the oven or pan until crispy.

Chili-glazed chicken breast with paprika sauce
2 portions.

Ingredients
2 chicken breasts
1 ts melted butter
2 ts sweet chili sauce
some pepper and salt

Paprika sauce
1\2 small onion, nicely cut
1\2 cm fresh ginger, shredded
1 ts oil
1 yellow paprika, sliced
1 small spoon thyme
1\2 dl water
1\2 dice vegetable bouillon 
1-3 ts sweet chili sauce
1 ts parsley 

Serve with (examples)
Mashed potatoes
oven-baked potatoes
asparagus, cauliflower, broccoli and tomatoes
Rice, pasta etc.


Preparations \ Instructions:
1. Paprika sauce: wash, rinse and slice all vegetables.
2. saute onion and garlic in a pan. add the rest of the vegetables, thyme, water, and bouillon. 
3. Let it cook for about 10 minutes until the paprika is soft.
4. Add the chili sauce to taste.
5. Chicken breasts: add butter to a heated pan. add the chicken and cook it for 2 minutes on each side to get a nice color, thereafter 5 minutes or until properly cooked.
6. add chili sauce. 
7. let the chicken rest for a few minutes after it's done.

Berry sorbet (Dessert)
2 portions.

Ingredients:
250g frozen berries of your own choice
1 1\2 dl icing sugar (melis)
1 eggwhite
1dl water
1-2 ts lemon juice


Preparations \ instructions:
1. Mix everything in a food processor of sorts until smooth.
2. Put the sorbet in the freezer so it keeps cool, or eat right away. Let it stay in the refrigerator for about 10 minutes after it is taken out of the freezer. 

Possibly add some fresh berries, cream, sprinkles or a sauce to the sorbet if you want to.

Pajeon (Green onion pancakes)
There are a lot of variations but this is how I usually do it.

Ingredients:

- A bundle of green onions 
- Flour
- Water
- Sugar
- Some type of oil (preferably without taste)
- Soybean paste  (can be left out just remember to season your batter otherwise like soy sauce)

Instructions:


Assemble ingredients:
1. Cut the green onions into 12 cm (5 inches) pieces
2. Make a batter by mixing flour, water, soy bean paste (or other seasoning) and sugar (depending on taste) until the batter is smooth and pancake like (not too watery)

Cooking:
- Heat up a nonstick pan and add your oil
- Put the green onions on the pan so they form a rectangle
- Pour the batter over the onions as evenly as possible
- Use a spatula to press down on it
- Turn it over after a few minutes when the bottom is golden and crispy
- When the other side is golden flip it again and cook for one more minute
- Serve with your favorite condiments 


My recommendations:
- Use hot sauce, soy sauce or sambal oelek for dipping
- Sprinkle sesame seeds on top
- Eat with your noodle soup and dip it in the broth
- Eat with kimch
- Add other vegetables like carrots, white onion, corn to the batter

Oven-baked apples with honey and walnuts
2 portions.

You need \ temperature \ time
ovenproof dish \ 170*C \ 10-15minutes

Ingredients:
2 apples, rinsed sliced in half
1\2 ts oil
1 ts honey
6 walnut kernels
1 branch Rosmarin

Preparations:
1. Slice the apples and scoop out the kernel.
2. Put the apples in a greased ovenproof dish with the largest side skywards
3. brush with oil
4. mix the honey, nuts and the rest of the oil together. put it ontop the apple where you scooped out the kernel.
5. Bake for 10-15 minutes.


Alternations:
add cinnamon or other spices you enjoy 
switch up the nuts

Humus 
2 portions. 

Ingredients:
400g chickpeas
2 cloves of garlic
2 ts lemon juice
1\2 small spoon salt
a dash of pepper
1 small spoon cumin
3 ts mayo


Preparations \ Instructions:
1. wash the chickpeas in cold water and dry them properly
2. add the chickpeas to a food processor\mixer and mix it until relatively smooth
3. add the spices and mix some more. add spices after your own taste. taste and try.

Energysnack 
a cakelike energy snack that's soft in the middle
~ takes about 1,5hours to make incl. cooking time

Ingredients:
100g dark chocolate 
5dl Musli mix\cereal
1dl walnuts
1dl hazelnuts
2dl dried fruit of your own choice
2 ripe bananas
1\2dl sesame seeds
1\2dl linen seeds
1dl honey
2dl vanilla yoghurt
2 eggs

Preparations \ instructions:
0. Preheat the oven to 150*C.
1. Crush or cut chocolate, musli\cereal, nuts, dried fruits and the banana in a blender.
2. add the rest of the ingredients. mix it well.
3. spread the mixture on a baking tray with baking paper.
4. Set it in the oven for 30-45minutes until it dries on the top.
5. Take it out and turn it. Let it sit in the oven for another 20-30minutes until it dries on the top.
6. Take out and cool.
7. Cut into a decent-sized slices

I do have a shitt load of vegan recipes from cookbooks if someone is interested in the downloads. I think I'm going to look through them and put some I think look good up here over the weekend.
