I buy a couple rolls, cut off the top layer and take out the "innmat" (lmao). Then I fill that with taco mince and put cheese on top. Cook them in the oven until the cheese melts and put sour cream and salsa on top 
to make the mince cheaper you can look into chicken or pork mince 

it's minimum washing up and you can make enough for several days with one pack of mince
Too much work lol and cheese is expensive
