i have no idea about the science behind it but if i were to make a wild guess it has something to do with density, porosity, surface area and heat transfer.

grilled cheese is like a sponge, loads of air holes in the bread, large surface area so the air can easily pass throu n cool things off. 

try eating your toast in a really warm room, then it shouldnt cool off as fast
