1. In Brazil we have the legend about an Amazon river dolphin, also know Boto-cor-de-rosa or pink river dolphin. The legend says that this animal at night become a handsome young men who seduce girls, impregnates them, and then return to the river in the morning to become a dolphin again. 
These animals are haunted because of their dried eye balls and genitals, humans of the region believe this parts brings good luck.

1.the giant squid digests food with its brain
2.sea cucumbers expell their organs from their rectum when they feel threated to confuse the predator in making it think that it's sick(can regenerate organs throughout the months). In extreme cases they take in water to swell up and scare the predator off and surprisingly not die from the swelling. 
3.jellyfish are 95% water and have no brain, spine, circulatory system, nervous system or digestive system yet in some cases can be immortal like the turritopsis dohrnii. They also thrive in toxic waters, so if the world ever came to an end, jellyfish would most likely take over.
