As it is one of the requirements for writing to mention one's patronus, you do have to somehow talk about it. However, maybe it could be that they had heard of the spell from an older sibling/prefect/etc, and are just guessing at what their patronus would look like @Nesta

She wishes for a pet of her own,  a white cat, but will settle with anything. (Maybe not the most recently deceased Aunt Tora's old ring, even though it probably would come to good use.) Katie wishes for her patronous to be a deer, since she has grown up with them around her home.
