During our travels this summer we have had the opportunity to taste many delicious dishes and treats and the EventTeam want to hear all about them!


We want you to share the recipe of something delicious that you have made.

I made pepper poppers from the Stardew Valley cookbook

Me and my oldest sister are huge Stardew Valley fans(my favorite is Sam and hers is Shane), so when we found out that there was a cookbook coming out, we immediatly pre-orderd it. Since I am still learning how to cook by myself (I know I'm late, but better late than never) I decided to cook Shane's pepper poppers the day after the cookbook arrived. So I spent my entire saturday preparing this dish without anyones help, which was kinda rough but sooo worth it in the end. They were so good and are now one of my favorite dishes to make!

the recipe is as followed:

ingredients:
5 large green Jalapenos 
halved lengthwise, seeds and membranes removed
5 large red Jalapenos halved lengthwise, seeds and membranes removed
1 tablespoon extra virgin olive oil
kosher salt
6 ounces cream chees, at room temperature
2 tablespoons mayonnaise
4 ounces pepperjack
chees, shredded
4 pickled jalapeno slices, finely chopped
1 scallion, thinly sliced(white and green parts)
1 garlic clove, finelygrated
1 teaspoon smoked paprika
1 cup corn flakes
1 tablespoon unsalted butter, melted
freshly gorund black pepper


instructions:

a little message from Shane:
"If you handle the peppers and then touch your eyes,
it can sting for hours. Just don't try to rinse out your eyes with beer."

The bomb ass tomato sauce base for any good meal
Tools you will need:
A ovensafe dish
Something that can blend or smash things somewhat fine

Ingredients:
Around 600 grams of tomatoes (doesn't matter which kind)
Around 200 grams of bell pepper or any pepper really (If you don't like the taste you can put less or none)
1 or 2 carrots
any green thing that is about to go bad in your fridge like a bag of spinach or arugula
spices to taste like salt, pepper, oregano, dried basil, thyme, rosemary ect
fresh basil if possible
olive oil (the higher grade it is the better it tastes believe me, you dont need to spend much to get a super good oil)
(I have food restrictions so I dont put onions or garlic but if I made this for someone else I would add one normal onion and a full garlic)
+ parmesan if you want

First set your oven to like 200 degree celsius (can depend on the oven)
Take out your ovensafe dish, I prefer the pyrex glass type thing, the broader the better because you want the vegetables to get some color
Cut up your desired vegetables to around equal sizes, but the carrots need to be pretty small and slim to cook well like pencil thickness and maybe like half of the carrot lenght the long way
Put the vegetables to the dish and drench them with olive oil (just so they get covered)
Add the spices you want like thyme and rosemary to they kind of infuse with the oil idk, but I usually add salt and pepper later in the process
Take your hand and message them a little bit so they get really covered (DO NOT SKIP THIS STEP) you can use a glove if olive oil gives you sensory issues
Put them in the oven for around 40 minutes or more if you like your vegetables smoky
Take the dish out of the oven and blend them until smooth
Put the fresh basil and/or other green things you have and blend again
(if you dont like bits and pieces you can shift the sauce through a strainer or cheesecloth or a clean kitchen towel)
Add the salt and pepper to taste, and more spices if needed
At last I would add parmesan because it gives a really nice tang and yummy taste but I am not rich so its optional
Now it's ready to be used as a pasta sauce or soup base, or put to pizza or anything really
After waiting it to cool down keep it in a nice dish and it stays pretty good for multiple days (I have tested it and it stays good for like more than a week as long its in a good container and sealed well in the fridge)

I usually have this just sitting around to be used in anything I want to make
My favorite thing to do is buy oat bread bc im gluten free and premade pizza bases are not it and put a bit of this yummy tomato sauce and some cheese I happen to have, like anything
sometimes I add cottage cheese or an egg for protein and it is so good I promise and also semi easy

It doesnt look like much but I can post a pic later
My best life hack is to buy fresh basil once and keep it alive for the summer, infinate money hack honestly bc it only needs watering like every 3 days and its so nice to add to things

Creamy sweet potato dhal with crispy coriander chips and mild yogurt

Ingredients (2 portions):

{option}450 g Sweet potato{option}1 Onion{option}100 g Red lenses (May contain Gluten)
{option}4 g Dear Milda{option}4 g Curry-on{option}200 ml Coconut milk
{option}4 g Vegetable broth (Contains Celery){option}25 ml Soy sauce (Contains Wheat, Soy, Gluten)
{option}1 serving bag Cilantro {option}2 Tortilla breads (Contains Gluten, Wheat)
{option}1 package Yogurt (Contains Milk){option}30 g Spinach (May contain Celery)
{option}10 g Ginger paste{option}2 tbsp Olive Oil (Step 4)
{option}2 dl Water (Step 3){option}½ tbsp Olive oil (step 2){option}¼ tsp Salt (step 3)


Instructions:

1. Heat the oven to 240°C/220°C (convection).
Dice sweet potatoes (unpeeled) into 2 cm pieces, and place on a baking tray lined with baking paper.
Mix with olive oil, salt and pepper. Roast in the oven for 20-30 min., or until soft.

2. Meanwhile, finely chop the onion. Rinse lentils. Rinse the spinach. Heat olive oil in a saucepan over medium heat. Fry onion for 2-3 min., until soft. Add ginger paste, Dear Milda and Curry-on, and fry for 1-2 min., or until fragrant.

3. Add coconut milk, lentils, water, vegetable broth, soy sauce, salt and pepper to the pan, and stir.
Bring to a boil, reduce the heat and simmer covered until the lentils have softened, 20-22 min.

4. Meanwhile, finely chop the cilantro. Mix coriander, olive oil, a pinch of salt and pepper in a small bowl. Cut the tortillas into 3 cm wide strips, and place them on a baking tray lined with baking paper. Brush on the coriander oil. Roast in the oven until golden and crispy, 4-6 min.

5. Add roasted sweet potatoes and spinach to the pot with the dhal, and stir until the spinach has softened. Remove from heat.

6. Arrange the dhal in bowls and top with a dollop of yogurt. Serve with cilantro chips.

You can pick your own spices if they can not be found where you live.
This was very delicious and I have made it more than once! ^-^ <3
