Dedication, i've tried knitting many times and i only manage to make scarf. Not the fancy ones. But there's plenty of good knit vids on youtube. I bet your niece will appreciate it lots. 
she just turned 2, i bet she'll love anything she gets lol
i've no problem with knitting socks, mittens, beanies etc easy things. she's size, i'll make socks in one day
but i don't want to give her socks, i bet she'll get them from everyone else too. i want something more special
i tried to make her beanie with cat earlier this year, but it was doomed....

It's good practice and gets better with time. Beanie with cat sounds hard. Im going to be auntie next year, i think it's time to begin practising knitting... If you have any tips where to start i'm all for it.

It's my first try, which is why i made testers. I have no idea what i am doing. I just trusted the video this time.

Roasted sweet potatoes.  This image looks a lot like the one I had! had roasted black beans and cauliflower insead of sweet potatoes.... with seasoning etc. It was delicious and craving it

I am considering starting a small sourdough starter so I can make bread too but I haven't decided if I have the energy to deal with that again.
