If there’s a kanji for the word you’d use that, hiragana is mainly for pronunciation as well as particles 
but some words like こんにちは for example doesn’t have a kanji, so then we just use hiragana 🤷🏻‍♀️

Do you mean meanings?
The meaning is pretty much the same but there’s different readings, different ways to pronounce the same sign
we group readings into two categories, onyomi (the Chinese readings) and kunyomi (the Japanese readings). There’s usually at least one onyomi and one kunyomi reading for each sign, but sometimes there’s even more than that. It’s what sign is written either before or after the sign that decides how it will be pronounced
