i'd recommend instant rice, i have ones that i can pop in the microwave for 90 seconds and its ready to go. rice and bean thread noodles are also good, usually only need to be in boiling or just hot water for 1-3 minutes. if you like tofu, some brands make tofu already marinated in a teriyaki sauce so again just needs to be thrown in a microwave or skillet briefly.
some foods to add to rice, noodles, or bread:
hearts of palm
artichoke hearts
cherry or plum tomatoes
cucumber
carrots
chickpeas (apparently they taste good blended with hearts of palm as like a vegan version of tuna salad. i don't like tuna salad texture though so i don't blend them together)
lima beans in tomato sauce, olive oil, and dill
pan con tomate is always good, take a slice of bread (toasted or untoasted), rub a tomato on it so you get the seeds on the bread (i'm so sorry for how that sounds) then drizzle with olive oil and salt. you can also add avocado if you like avocado.
a snack i got from an American Girl doll book is a torilla with cream cheese and cucumber then folded and half and cut into 3 triangles. they added alfalfa sprouts and other veggies, but family is lazy/picky so we noped on the extras.
fruits are good snacks and usually don't require much prep.
pre-made soups are good too! potato leek, tomato, butternut squash, etc.
smoothies are also a good way to sneak nutrients in, whether you buy pre-made or make it yourself. you can throw spinach, kale, cashews, and other health foods among the fruit and the flavor usually won't come through.
