Oh yeah! I think about this when eating or making a lot of vegan fake meats too! Like what I’m missing there is the more like solid fats and stuff, and vegan dairy too 🥲 like I have a hard time with vegan cheese idk if it’s specifically because of the fat but yeah idk, sometimes it just lacks a lil smth when it’s trying to imitate something else 
ok no, vegan cheese is just something that is so far from cheese, you wouldn't even call it distant cousins
vegan cheese is its own hellhole
but yeah, the lack of the fat in the product really is what makes a difference in mouthfeel for most of them

I watch this vegan youtuber who makes all these crazy vegan meats and he always add a bunch of weird like things  to give texture and Half the time it’s just to achieve like a good fat distribution in the product, so it seems like that rly is the key to making stuff like this better

i went to starbucks yesterday ( i go there like once every few months) and i was like ooh treat yourself blahblah cuz i had an early class. and i ask for an oatmilk matcha latte. and they give me !!!!!! almond milk instead of oat milk! i was like ahh i'll drink it no worries bc the guy was new apparently. but then i actually drank it and rly disliked it sadly ,,, so yea, oat milk best milk!
