Cheese slices is the sick option!!!! Feta with pastry dough is super common!!! Soft cheeses with sweet topping is super common have you not had goats cheese with honey or Camembert with jam
nooooooooo it's because the croissant was kinda crunchy and soft, then the cheese was kinda creamy when u bite into it but not too creamy, still solid enough, and then the sugar adds extra crunch to it.... it's not meant to combine the flavours of the cheese and the sugar, the sugar is like sesame seeds on a burger bun..

but salt would be boring, and because croissants lean more towards sweet than salty sugar seemed more appropriate.. it's supposed to be a contrast between salty and sweet! if it was salt then it'd just have been painful to eat
