Natsume Yuujinchou is definetly something to watch! It's happy (tho it has sad moments too, there's a good balance going on) it has fantasy and Natsume deserves all the best a very good son. Basically a young boy sees yokai and things are slowly getting explained as the anime progresses.
Arakawa under the bridge is a nice one too. It's mainly a comedy with a hint of romance. Basically a business man starts living with bunch of homeless people under the bridge because [the reason explained in the first episode].
Kono Bijutsubu ni wa Mondai ga Aru! the anime version feels a bit more fanservicy than manga, but it's still enjoyable. full of moe stuff tho, beware. Slice of life styled comedy of a art club. Main character has a crush on a guy who's only into 2D women, but it doesn't center fully around this idea.
Akagami no shirayuki-hime It's a romance one, but has great action and fantasy setting. Again idk how to describe it shortly, but I really liked it.
Sket Dance ok this is kinda fetching far from what you're looking for. it's a comedy of school club helping people
Kyoukai no kanata has ton of dark moments, but the happy ones are cool? + fantasy!! I'm not sure how to describe this one in a simple way. Just watch it.
Show by rock!! furries everywhere. this one matches the happy mood of haikyuu a bit I think. Also lots of moe stuff, beware. It's about girl named Cyan getting trapped in another dimension that's community bases 100% around music.
I tried to come up with stuff that remined me even in some way of haikyuu's mood, but idk how accurate these really are
