also i like making different versions of pasta and tomato sauce, just mix it up with different vegetables or like soy bits or quorn or something
soups!!! especially my mom's tomato soup...idk why i'm so into tomatoes

you need:
a couple onions
tomato puree
a couple cans of crushed and/or strained? tomato
a can of beans of your liking, i usually go with brown or kidney beans or a mixture of different ones
(olive) oil
spices, i throw in pretty much anything i feel like but i'd use at least paprika, oregano, basil, crushed or powdered pepper, salt and a pinch of sugar for the goodie tomato taste
and optionally cream or something to make it more hearty

and then just....
chop up the onions
put a soup pan thingy on mid to high heat
put in the oil, tomato puree and sauté the onions
pour in like at least 1l water, add more later if needed
(you might want to put in some of the spices at this point too)
wait for it to boil and throw in the canned tomatoes and let it simmer for as long as you like, from 15 minutes to 2 hours
add the optional cream
and lastly rinse the beans if you don't like the gooey texture of the salt water they often have on top, mix them in and throw in the final spices

it's best served with freshly baked bread but i like to eat it with pretty much anything, like right now i'm craving this soup with chicken meatballs

Soy-fried noodles:

1 ) Boil them noodles
2 ) Chop the carrots, garlic & mushrooms
3 ) Put carrots, peas, soybeans, garlic and mushrooms into a wok
4 ) Fry the greens for a little bit of times
5 ) Put the boiled noodles in the wok
6 ) Pour soysauce over it
7 ) let it fry a lil' and let them get to know eachother
8 ) Gobble it down

My go to lazy food tbh

i haven't looked into any new vegan products on the market for a while because i've been living on takeout/my partners cooking for months but like back when i actually cooked myself i couldn't find any eligible replacements for chicken, they didn't even sell quorn in that shape/texture here sad boo
