today in my southern af kitchen

I'm trying to render ham fat into lard for the first time
it feels a little silly cuz I don't have a whole lot of fat to work with, but it's practice.

anyone else like to do ambitious kitchen experiments?

I just re-assessed the ham situation and got some more fat off it
somehow, my entire body is now covered in ham fat and I need a shower

Update: whole house smells like ham

My most ambitious experiment was sourdough bread. To think I actually have the stress levels to be unable to not sit and watch it poof like time is running out. Also, it molded in the end wops

Everyone was making sourdough early in quarantine lol
thing is, I HATE sourdough bread, so I never jumped on that bandwagon.

I do own, and regularly use a bread maker though, best $8 I ever spent at a flea market

I have to follow the recipe or it will taste bad.

It was my first taste of sourdough bread and I did not really like it either. I think I'll just make a different type of bread tbh w no sugar bc that was like the only positive thing about it i guess

I mean, I've always thought white sugar was optional in bread.
I prefer to make a whole wheat bread and I use honey instead of sugar.

I once tried to make vegan burger patties but in the end I fucked up the seasoning and had to pour in milk to make it taste ok again oops

what foods do you usually preserve?

likely, just that we just buy bread so it's always sugar in it

I do lots of high-acid canning, like pickled green beans, pickled peppers, tomato sauce, crushed tomatoes, ketchup, bbq sauce.
I do some low acid pressure canning, green beans mostly.  I used to pressure can broth, but honestly I use make and use broth so fast in this house there's no point. I want to start canning my own beans.
I do lots of dehydrating, I make tomato powder, I grow and dry most of my own herbs and hot peppers, I make beef or deer jerky sometimes, too.
I want to try and learn as many different safe preservation methods as possible, but there's some I just dont like - for example I NEVER eat jelly/jam, but thats what half the fruit preservation recipes are...

I highly recommend a bread maker, if you have the room for one.
I dunno about anywhere else, but in the US, they're in thrift stores and flea markets everywhere, no one wants them so they're super cheap.
But you just put the ingredients in (in the order the recipe says), and hit a button. That's it. It will bloom the yeast, mix the dough, wait for it to rise, knead it, rise it again, and bake it all in one.
I often throw my ingredients in the maker before I go to bed and have bread in the morning.

stuff that survives frost or has a rather short vegetation period (like max 4 months), because it's freezing at night till late April or even May and starting again in September.

My parents bought a fancy greenhouse this year, so I hope we will be able to grow bellpeppers for the first time and maybe more than 5 tomatoes per plant haha.
