Or, the real answer is more like during the civil war thing between the communists and the republicans? in China during the middle of the last century, the republicans? fled from China and settled in Taiwan. Ever since, China (the alleged communist regime) has claimed that Taiwan is China, and has always been China. So what they say regarding it is very ??? because Chinese people learn that Taiwan is China, so reclaiming it is a bit strange but whatever.

It's a complicated story, but Taiwan has been part of China like Norway was part of Denmark for a while. As I said, it's much more complicated, but that's the gist of it. Something something cold war liberalism vs communism.

China then didn't accept the independence of Taiwan when they wanted to be independent though, and most Chinese people are still taught it's part of Chinese territory. It's really interesting to ask a Chinese person to map out China for you, because they'll mention a lot of places we consider independent.

China, culturally, considers itself a big bad powerful country, which you also see with the islands they're building to claim part of the sea around the Philippines, because they want a legitimate claim to the area according to marital law.

The biggest part of it, is because we want to keep the good relations with China, but there's also other stuff making us not recognize them as independent.

We have a lot of rules for international law around countries and their independence, and some of it is, that we can't recognize break out regions as independent countries early on in their establishment, because all nations have agreed not to interfere in national affairs in different countries (at least on the paper) and taking sides in a conflict like that will be troublesome and it can actually give legal consequences (that no one gives a fuck about, unless it's economic trouble because we aren't friends with an economic important player like China.) There's also something about trading, making official visits etc. to these almost-independent regions and something about financial aid to an enemy of another country.
I could continue, because we had a long discussion in class about when it was the right time to recognize new countries, but I'll be honest and say, that the legal discussion, while interesting, isn't the biggest factor, because most countries just try to keep out of China's way, because we've as a united front in the west decided to accept a "one China policy."

If we ever decide to officially see Taiwan as independent, it'll usually start with the official visits, official trades with the region and so on. Recognizing a region as independent will come by the end of it instead. In Denmark we spent quite a lot of years trading with Kosovo, before we recognized them as an independent country as well.
