I am currently reading The Brilliant Abyss by Helen Scales (heh) and it's very good. I am very afraid of the ocean, and the book fills me with fear every time we go into the depths, but I honestly really enjoy the explanations of different animals living on the bottom of the sea, and I keep being impressed by metal snails and other stuff.
I have Eating to Extinction by Dan Saladino on my tbr, but will throw it your way anyway. Also The Hidden life of Trees by Peter Wohlleben.
One not quite fitting what you're asking for, but one I still will recommend is "Gopler Ældes Baglæns" by Nicklas Brendborg, it also has an English translation, if Danish is too hard.
A fiction series I'll recommend as well is The Winternight Trilogy, where the first book is named The Bear and The Nightingale. It's about Russian folklore, and is very much in touch with nature and old spirits, while clashing a little with Christianity.
