something i make often is this lentil soup/sauce. it's just garlic, onions, ginger and whatever veggies i happen to have fried in oil, then i add can of crushed tomatoes, water and lentils. cook it until lentils are almost cooked, then i add soy sauce, little bit of some kind of sweetener and spices, and let it simmer until lentils are ready
its good because you can just swich veggies and spices you use to make it different each time
sometimes i add coconut milk if i want more creamy
and you can add more water to make it soup, or just add less water to make it more sauce like and eat it with rice, quinoa or whatever you like
