Here’s one of my personal favorites which i’ve made at least 3 times this christmas season so
far.
It’s a very simple shortbread cookie recipe, and is by far my favorite.
I find shortbread cookies are usually extremely dry and fall apart so easily.
These turn out firmer and are oh so tasty!!
This Shortbread Cookie recipe calls for:
2 cups of butter (or one whole brick of butter)
1 tablespoon of vanilla (I usually use 1.5-2 tablespoons)
1 cup of sugar
4 cups of flour
Instructions:
1.Mix together the butter, sugar and vanilla until it becomes a creamy mixture.
2.Add flour a cup at a time until all four cups have been added
3.Chill for 30-60 minutes (I find it makes the dough easier to work with when rolling out
and using cookie cutters)
4.Put flour down on your surface and on the rolling pin, roll the dough into sheets and
cookie-cut away!!
5.Put the cookies on a cookie sheet lined with parchment paper (easier to clean up
afterwards)
6.Bake the cookies with the oven set to 325 for 10-15 minutes or when you see the edges
going golden.
7.Voi-la the cookies are complete! Time to clean up the mess.
