need advice for quitting my job

so ive been working at a greek restaurant for 3/4 months. I absolutely hate it. at first i thought maybe its because waitressing is difficult and everyone is always frustrated during busy hours and im still new so its normal to feel stressed, but I just ended up realizing my boss and his son are just assholes. to make maters worse i STILL have not been paid for the month of June and i was told id get it by sunday, but i havent, and i told him again i need to be paid by tuesday because i have bills to pay. my mom told me to take the money and quit because what he is doing is illegal, almost a full month without paying me + a few other employees.

Ive never quit a job after working there so little, i know that im having a bad time there and im being treated poorly and not even getting paid, but how can i tell him i want to quit. should i say working here hasnt been good for me mentally, or just lie and say i got an offer for another job. Idk why im overthinking it so much because im truly unhappy ut i somehow still feel bad?? also its hard because my boss only speaks dutch and greek and i can barely speak enough dutch to have this convo so it will be awkward to communicate, but i dont think i should suffer working there any longer.

You write a resignation letter and give it to him/leave it on his desk and say peace. He doesn't need an explanation but I'd be looking for a job asap rn 
Or something that's very common lately is just never showing back up and ghosting the workplace

your mom is so right. take the money as soon as you can and leave/report. like legohouse wrote, you don't need to give him any explanation and there's certainly nothing to feel guilty about. just make sure you have enough savings to support yourself for a bit, if you're not in a position to get hired right away afterwards. the situation sounds super stressful but i'm so proud of you for doing this!!
