gender is a social construct yes, but that doesn't mean you can just change the definitions of that construct.
we decide whether someone is a man / woman based on mostly phenotypes: hair, face structure, dress, mannerisms etc. biological: breasts, wider hips, etc.
these definitions are not set in stone, they can be moved around a bit (someone who looks feminine but is flat-chested is still seen as a woman), but they can't be denied. you are seen as a woman by society even after your hysterectomy because all other fenotypical features of you will still label you as a woman.
in our society, there are indeed only two genders that are delineated as social constructs. we have a (more or less) fixed idea of what men or women are supposed to act like / look like / feel like
we don't have that with other neogenders like non-binary, agender, etc. that doesn't mean i'm gonna stop anyone from identifying like that if they want. but i think a lot of people misunderstand social construct. they think just because it's a social construct, it can be vanished or redefined by individuals. no it can't. money and countries are also social constructs. but i can't call a 5 dollar bill a 10 dollar bill no matter how hard i try.
