You can play the storyline (battling gyms, trainers, doing tasks/quests)  or go around collect and train pokemon forever if u want that, or both. But ye you do have to level up your pokemon through the game anyways to complete the story

You can still get the fairy ponyta tho at least in shield and its so cute 
And some u can trade for versions from other regions so they look differently
