I liked it a lot. 
Let's go is basically you get eeve or pikachu, based on which version you choose, and it is very similar to the classic pokemon games. Except you can dress up and pet your pokemons i guess. 
Shield/sword is a lot of new pokemons, a whole new region. Still similar plot as the classic but you have a giant area to collect pokemons on. Some pokemons are weird tho. 

I don't really remember more. Would suggest watching the trailers

Depends what you want. Let's go is more like the classic games so if you haven't played before it can be a nice introduction.. but sheild/sword has much more pokemons
