You should use organic flour since regular is like varmebehandlet and bleached so the thing u need is kinda gone, I think. I used that at least. Otherwise i think you can pick any. Sammalt hvete works pretty well but u will get everything in like a kneipbrød consistency and not loff, so depends on what u want
