I just used regular hvetemel so that might have been one of the reasons for flat bread too rip

Ye, regular hvetemel is heat treated and i think that kill the stuff the yeast feed on
Its fine in the starter but I think it makes for a weaker dough cus less protein I think

it turned like a gele top, it got such a peek. and it got sorta small, we can say i did not share the dough it in 2 very well
