Hey guys, it's Eli, and I wanted to share a recipe I tried out a couple of years ago. A friend of mine was on a health kick, and she shared this recipe with me. I was a bit skeptical, but I tried it and fell in love. So, I'm sharing it with you so you can enjoy it too.
It's super easy, and you won't regret trying it.
Chocolate Banana Vegan Ice Cream
Ingredients:
» 2 - 3 Frozen Bananas.
» 2 - 3 tsp Cocoa Powder
» 1 tsp Vanilla Extract
Equipment:
» Cookie Sheet
» Knife
» Food Processor or Blender
» Teaspoons
Process:
» Before you freeze your bananas, cut them up into small little slices, this will make it easier for your to blend them as well as save your fingers from freezing and your knife from slipping when cutting frozen bananas. Trust me.
» When you have your slices, place them on a cookie sheet so they don't touch and into the freezer they go for at least and hour.
» Once frozen, take the bananas out and throw them into a blender or food processor with the cocoa powder and vanilla until it becomes nice and smooth.
» Once you've got it at the consistency you like, then scoop it out of the blender or processor and into a bowl. Try topping it with fresh fruit or nuts if you want a little extra taste or texture.
» Enjoy!

Hey guys, Alexys here once again. So during the summer I'm all about quick, as little heat as possible, whatever goes in the bowl and in the stomach. Because let's face it, it's already hot and humid and sticky; you don't need extra added heat from the oven or stove.
To prepare my meals during the summer, my style would probably just be messy, but still kinda healthy I guess (when I don't decide to just go for a bowl of fruit the whole day because I'm super lazy oops).
So anyways, continuing, my lunch mostly consists out of salads to be quite honest. 3 big tomatoes, sliced down, add a white onion, also sliced, a bit of salt, a bit of vegetable oil, some feta cheese or mozzarella diced in cubes and my lunch is pretty much done. Sometimes I add bell peppers or cucumbers too. It's literally a process of 'What do I have around the house?' and I toss it all in. It can be tomato and cheese salad, a tuna salad or a salmon salad, but pretty much whatever I need to do to get some food in without having to turn on the stove.
But let's face it, anyone can dump ingredients in a bowl and call it a salad/meal. So here are some other very quick and very simple recipes for the summer.
Watermelon and Prosciutto skewers. It's the perfect combination of sweet and salty with a bit of savory. All you need is some watermelon, preferably seedless, prosciutto cut in half lengthwise, store-bought balsamic glaze and some skewers. All you need to do is put 3 pieces of watermelon on the skewers, in between half a slice of prosciutto (neatly folded so that it would be the approximate size of the watermelon slices) and just before serving you drizzle some balsamic glaze. And that's it. They're delicious, sweet and refreshing, salty and savory, and you only need like 10 minutes to make a bunch of them and absolutely no heat.
This is not really for the underage people here, but a treat for the summer: Drunken strawberries. You'll need a cup of light red wine, half a cup of sugar, a dash of cognac and strawberries cut into halves or quarters. All you need to do is combine the wine, cognac and sugar and stir the strawberries in the mix. Leave to refrigerate for around half an hour (if you want those strawberries extra drunk, leave them for an hour or more, and they're ready. Get two scoops of ice cream and place those drunk slices of strawberries in your ice cream cup and there you go, the perfect summer dessert! And you can do this with other fruit too such as cherries or whatever floats your boat. Because in cooking, it's all about your own preference (when you cook only for yourself, otherwise please do take the others into consideration as well).
