Hey guys, Georgia here :) This week I am going to show you how to make strawberry shortcake. It tastes and looks amazing, you can see the one I made at the end.
Ingredients
For the biscuits:
75g plain flour
50g butter
25g caster sugar
Cream filling:
330ml double cream
2 tsp of icing sugar
5ml vanilla essence or pod
250g strawberries
Coolie to decorate
300g mixed berries (fresh or frozen)
1 tsp of lemon juice
Icing sugar to taste
Method.
Place the butter, sugar and flour into a food processor and mix until it stick together.
Once it has stuck together and formed a dough roll it out so it is not too thick and not to thin.
Cut your rolled out dough into circles using a circular cutter.
Place your cut out dough onto a greased baking tray and place into the oven for ten minutes.
Cook the shortbread for ten minutes and take out of the oven when they are nice and golden.
While your biscuits are cooling pour your cream and vanilla into a bowl and whip either using an electric whisk or by using a hand whisk.
Once your biscuits are cool put your cream into a piping bag. Place one of your biscuits onto a plate and pipe cream round the edge of the biscuit, placing the fruit into the middle.
Put another biscuit on top and put on some more cream and fruit.
Recipe for the coulis.
Place your fruit and icing sugar into a bowl and blast it together with a stick blender.
Once the fruit is smooth get a jug and a sieve. Place the sieve on top of the jug and pour the fruit into the sieve. Mix with a spoon so all the smooth liquid will go into the jug and the bits of fruit will stay in the sieve.
Using the coulis in the jug put it into a bottle and decorate on your plate as you please :)
